2 c Fresh rhubarb (chopped into 1/2" pieces) or 16 oz frozen rhubarb, thawed and drained
1/2 c Peeled and sliced apple (or substitute pears, sweet cherries or plums)
2 tbsp Granulated sugar
1/4 tsp Cinnamon
1/2 c Whole-wheat flour
1 c Old fashioned rolled oats
1/4 c Brown sugar, packed
3 tbsp Butter, cold
3 tbsp Flaxseed meal
1/4 tsp Ground nutmeg
1/3 c Pecans or walnuts, coarsely chopped
Preparation
-Preheat oven to 350 degrees.
-In a small bowl, combine rhubarb, apple, granulated sugar and cinnamon. Pour fruit mixture in a 9" pie pan.
-In bowl of a food processor, combine flour, oats, brown sugar, butter, flaxseed meal, nutmeg and nuts, if desired. Process until mixture resembles coarse sand. Sprinkle on top of fruit. Bake 25 to 30 min, until filling is bubbly and topping is browned.
