sift the flour and the salt into a mixing bowl. Stir in the yeast, followed by the milk and water. using your hands, mix together until it forms a soft, pliant dough. Turn out and knead thoroughly for five minutes, or until it feels silky smooth. roughly flatten it, and make a few indentations with your fingertips. Pour over 1tbsp olive oil and fold the dough over it, carefully kneading until the oil is absorbed. it will be very squelchy at first. Shape into a ball, lightly oil and return to a large bowl. Cover with plastic wrap and leave in a warm place (bathroom) for two hours or until the dough has doubled in size
