Buck's Garlic Veggie Burger

Quick & tasty Veggie Burger

Ingredients

3 tbsp Extra virgin olive oil

1 tsp Cumin

2 Red (or any) onion

2 tsp Parsley

6 clove Garlic

6 Green onions, diced

2 cups Finely chopped fresh mushrooms

2 15 ounce Can black beans

Salt, pepper, garlic to taste

1 cup Oats

Preparation

Cook beans until very tender. 2tbsp olive oil in pan and carmelize onions using olive oil. Then set aside in bowl. In same pan put all other veggies except beans and cook until tender with 1tbsp olive oil. Mash beans until... well...mashed. Put all ingredients together and form into patties. Put into freezer using wax paper if necessary to separate for about 15-20 min until very very firm. Cook on grill (usually 4-5 minutes on each side with a piping HOT grill) slightly charred is good.

Cook's Notes

This is a generic recipe. I usually throw the "kitchen sink" into this meal and use anything I have left over (and I mean almost anything ie rice, meat, vegetables, etc.). This recipe loves to be altered and is very forgiving. For example you can put a dash of liquid smoke in it and put it on the grill and it takes on an entirely new character.
