Tuscan Tomato Soup

Delicious soup- can be made into a creamy bisque with the addition of non fat milk

Ingredients

TUSCAN TOMATO SOUP

1 cup Chopped onion

2 Garlic cloves, minced (powdered works too)

1 tbsp Olive oil

2 cans (14 & 1/2 oz each) diced tomatoes - no sugar added

Dried basil, garlic and oregano

1 can (14.5 oz) Chicken Broth or Veggie Stock

1/4 cup Chopped fresh basil

Salt and freshly ground pepper to taste

Splenda - just a bit to bring the sweetness of the tomatoes out, like you add sugar to spaghetti sauce!

Grated parmesan cheese

Preparation

Cook onion and garlic in oil or broth in large saucepan, 3 minutes.

Add tomatoes, broth and basil, garlic and oregano to taste - a few shakes of each.

Simmer 10 minutes.

Cool; pour half the mixture into blender or food processor; cover and run on high until smooth. Repeat with remaining mixture. (Our blender held the entire mixture.)

Add a bit of Splenda - taste to be sure flavor pops but it's not sweet .

Stir in fresh basil.

Garnish each serving with a small amount of parmesan cheese (optional).
