1. Preheat the oven to 450*. Prepare pastry crust and line in a 9 inch pan. Prick the crust and bake for 5 tp 7 minutes or until pastry is set and dry.
2. Remove crust from oven. Sprinkle 1/2 Cup of the queso fresco cheese evenly in the crust. Cool in pan on a wire rack. Reduce oven temperature to 375*.
3. Meanwhile, cut the tomatoes into wedges; drain the wedges on paper towels. Arrange the wedges over the melted cheese in the baked crust.
4. In a food processor, combine the basil-garlic mixture, remaining queso fresco cheese, mayo, parmesan cheese, and pepper. Spread mixture evenly over tomato wedges.
5. Bake in the 375* oven about 25 minutes or untill cheese is golden. Let stand 5 minutes before cutting into wedges. Serve warm. If desired, garnish with additional basil leaves.
