Baked Potato Soup - ram (picture)

Thick & creamy- hubby's fav. potato soup & mine, too! Great reheated.

Ingredients

2/3 c Butter

2/3 c Flour

7 c Milk

4 Lg potatoes (baked, peeled, & cubed)

4 Green onions (sliced)

12 Bacon slices (cooked & crumbled)

1 1/4 c Shredded cheddar cheese

1 c Sour cream

3/4 tsp Salt

1/2 tsp Pepper

Preparation

In a 4-quart pan, MELT butter.

STIR in flour until smooth.

Gradually ADD milk, STIRRING constantly until thickens. ADD potatoes, onion, bacon, salt, and pepper.

REDUCE heat and SIMMER for 15 minutes.

ADD remaining ingredients. STIR until sour cream and cheese is melted.

Cook's Notes

I usually cut up the potatoes and boil them to save time. I also like it best with the potatoes unpeeled. ** TO BOIL POTATO CUBES- PUT in saucepan, ADD just enough water to cover, BRING to boil, REDUCE heat and SIMMER 15-20 minutes until tender, DRAIN. ** Great reheated.

My family loved this potato soup! Full bodied flavor & texture. Delicious. Great for a cold winter day, or anytime really! Not the run of the mill potato soup at all.
