Chicken Tortilla Soup

Crockpot chicken tortilla soup

Ingredients

1 1/2 lbs Boneless chicken breast

1/2 Tspn red pepper flakes

2 Tbspns chopped garlic

3 - 24 oz Jars of chunky mild salsa

1 Small onion chopped

2 cups Chicken broth

1 Tspn ground cumin

Salt and pepper to taste

2 Tblspns of chopped cilantro leaves

1 Lime

6 Corn tortillas slice in 1/4 inch strips

1/2 c Shredded cheddar cheese

1 Avocado peeled and diced

Preparation

Place chicken in slow cooker

Add Red pepper flakes, Salsa, onions, chicken broth, cumin, salt and pepper on top of the meat. Cook covered on high for 3 hours or low for 8 hours. Add additional broth if necessary. When chicken is tender, use the tines of the fork to shred the meat. add cilantro and meat back in and stir. Serve in soup bowls, place corn torilla strips in botton

pour soup over then add squeeze of lime, cheese and avocado, Serves 4 to 6
