Sunday Morning Casserole

A lighter version of a Paula Deen recipe

Make this on Saturday night, and throw it in the oven Sunday morning before church. Goes great with a fruit salad.

Ingredients

2 slices Whole wheat bread, cubed

1 lb. Mild pork or turkey sausage, browned

6 Eggs, beaten (or use egg substitute)

2 c. Fat free milk

1 tsp. Mustard

1/2 tsp. Salt

Pepper to taste

5-6 Red potatoes, unpeeled, cooked, and sliced thinly

1 c. 2% sharp cheddar cheese, grated

Preparation

Spray an 8x11x2 casserole dish with nonstick cooking spray. Layer cubed bread, then top with cooked sausage, then potato slices, then cheese. Mix the eggs, milk, mustard, salt, and pepper in a bowl. Pour over casserole, cover, and refrigerate over night. In the morning, preheat oven to 350F. Bake casserole, uncovered for 30 minutes or until it is set.

Cook's Notes

7 WW points per serving if using turkey sausage, egg beaters (substitute), fat free milk, 5 potatoes, and low fat cheese.
