Apple Walnut Salad

Ingredients

2 cups Diced granny smith apples peeled or not.
1 tablespoon Lemon or lime juice
2-4 tablespoons Brown sugar
1/2 tsp. Vanilla
1/4-1/2 cup Sour cream
1/4-1/2 cup Chopped walnuts
Toasted coconut (opt.)

Preparation

Wash apples, peel if desired, core and dice.

Toss apple chunks in a quart sized glass bowl with the lemon or lime juice to prevent browning of the fruit.

Stir in 1-2 Tablespoons of brown sugar, vanilla and 1/4 cup sour cream.

Stir in chopped walnuts.

Sample and adjust sour cream and brown sugar to your liking.

Chill up to 1/2 hour or serve immediately.

Garnish with toasted coconut sprinkled on top if desired.

Cook's Notes

This salad is best made with chilled apples. When the salad sits a while it may get juicy. I like to serve this at tea parties with a leaf of red leaf lettuce underneath to make a colorful presentation.
