Easy to make quiche that keeps well during the week for a planned breakfast

Ingredients

Egg Beaters
Mushrooms
Green Onions
Salsa
Olive Oil

Preparation

In a large bowl, empty contents of egg beaters carton, incorporate chopped mushrooms, onions, salsa and a little olive oil into the mixture. Spray or coat baking pan in olive oil, and empty contents of bowl into pan. Preheat oven to 350 degrees, and cook for approximately 20 minutes until egg has firmed and solidified. Cut into serving pieces for breakfast and save in individual baggies for convienance.

The ingredients can be modified to fit your taste. i.e. ham, bacon, etc.
