Lentil Bean Salad

Ingredients

3/4 c Rinsed lentils

2 tbsp Red/white vinegar

2 tbsp EVOO

2 tbsp Chicken stock

1 tsp Dijon

2 cloves Garlic, minced

1/2 tsp Salt

1/2 tsp Pepper

Jar roasted red peppers

1 tbsp Parsley

1.2 c Feta

1 tsp Shallots

Preparation

Boil Lentils with 4 c H2O for 15 minutes

Meanwhile, mix vinegar through pepper. Add everything else including cooked lentils. Serve warm or cold.
