Ingredients

2 cans (14.5 oz each) low sodium chicken or vegetable broth

1 can (14-19oz) red kidney beans, rinsed and drained

1 can (14-19oz) white kidney beans, rinsed and drained

2 cans (14.5 oz each) diced tomatoes

6 Carrots peeled and sliced

1 bunch Scallions, sliced

3/4 tsp Dried Italian seasoning

12 oz Rotini pasta

1 pkg. Frozen spinach, thawed and squeezed dry

Preparation

1. Combine broth, beans, tomatoes (with juice), carrots, scallions and Italian seasoning in slow cooker.

2. Cover, Cook on Low 6 to 8 hours.

3. Prepare pasta according to pkg directions. Add pasta and spinach to cooker and stir. Cook until heated through.
