1 Small cucumber
1 Tomato
1 Small sweet onion
1 teaspoon Olive oil
1 tablespoon Red wine vinegar
Salt and pepper (optional)
1/2 cup (2 ounces) crumbled low-fat feta cheese
Coarsely chop cucumber, tomato and onion; transfer to a bowl. Add oil and vinegar; toss well. Season to taste with salt and pepper, if desired. Transfer to serving plates; top with cheese.
