Chicken & Potato Soup

Delicious Soup - can be a meal or appetizer!

Ingredients

1 lb. Chicken (shredded, cubed, etc)

4-6 Potatoes (Any Kind - red, white, brown)

1 Head Garlic

1 Onion

1 stalk Celery

3-5 Carrots

1 Swiss Chard (chopped Stalk, leaves Intact)

1 Lemon, halved

2 cans Chicken Broth

32 oz. Water

Pepper

2 Basil Leaves

Assorted Herbs - (Rosemary, Thyme, etc)

Olive Oil

Preparation

1) Cut up all ingredients. Recommend the Vegetables and Potatoes to be chopped (small cubes for potatoes). Best to use a mini food processor for Onions and Garlic.

2) In a Large cooking pot, pour enough Olive Oil to cover the bottom. Bring to medium heat and toss in Onions and Garlic. Add a couple shakes/cracks of pepper and cook till slightly glazed/brown and then add Chicken.

3) Stir mixture together, adding more Olive Oil as needed. Toss in Herbs and chopped Swiss Chard stalk, more Pepper, and cook for approx 2 more minutes.

4) Add Chicken broth and Water, bring to boil. When boiling, add Potatoes, Carrots, and Celery and reduce heat to low.

5) Let sit for about 1 1/2 hrs. Stir occasionally. After time, add Basil, Squeeze Lemon into pot and toss in along with the Swiss Chard Leaves and cook an additional 30 minutes.

6) Remove Lemon, Basil, and Swiss Chard before serving. Enjoy!

Cook's Notes

*Soup should be mostly clear. *All ingredients are rough estimates. I use more or less what I've listed. *Swiss Chard can be left out entirely (depends on your taste).
