1/4 c. Orange juice
2 t. Lime juice
2 t. Chopped fresh cilantro
4 t. Canola oil
1 t. Grated peeled fresh ginger
1 t. Salt
2 c. Diced cooked skinless chicken breast
1 1/2 c. Frozen shelled edamame, thawed
1 Small red bell pepper, diced
1 4 Hass avocado, halved pitted, peeled and diced.
Whisk together the orange juice, lime juice, cilantro, oil, ginger, and salt in a large bowl. Add the chicken, edamame, and bell pepper; toss to coat. Add the avocado and toss gently. Serve at once or cover and refrigerate up to 2 days.
