Arugala Salad w/Orange Poppy Seed Dressing

Fresh and simple salad

Ingredients

Salad:

4 Plum tomatoes, thinly sliced

1/2 Seedless cucumber, thinly sliced

1 bunch Arugula or watercress, chopped

Dressing:

3 tablespoons Extra virgin olive oil

2 tablespoons Red wine vinegar

1 tablespoon Orange marmalade

1 teaspoon Poppy seeds

Salt and Pepper

Preparation

Whisk together the vinegar, marmalade and poppy seeds, then stream in the 3 tablespoons EVOO.

Toss the tomatoes, cucumber and Arugula with the dressing. Salt and pepper to taste.

Cook's Notes

Variation - Use apricot or raspberry fruit spread instead of the orange marmalade or use strawberry jam w/balsamic vinegar, EVOO, basil
