| 2 | Tbls. butter (or enough to moisten bread crumbs) |
| 1 cup | Seasoned or plain bread crumbs |
| | Zest of one lemon |
| | Handful chopped fresh parsley |
Line baking sheet with foil and spray with non-stick cooking spray. Place Cod on the foil. In glass bowl, melt butter in microwave, stir in bread crumbs, lemon zest and parsley, until moistened. Pat moistened bread crumbs on top of Cod filets. Bake in 350 degree oven for about 20 minutes until done and fish flakes easily. Broil under high heat about 5 minutes to lightly brown bread crumb topping.
