1.) Place the oven rack in the centre of the oven. Turn oven on to 375* F (190* C). Cover a baking sheet with foil, grease with cooking spray.
2.) To assemble your nachos, layer the ingredients on the sheet as follows:
a) 4 cups tortilla chips
b) 2/3 cup (150ml) veggie ground round
c) 1/3 cup (75ml) red pepper
d) 1 cup (250ml) of the cheese
Repeat a-d until all ingredients are used - remember you will have extra cheese to use on the top layer. Bake for 15 minutes until cheese is melted and starting to brown.
3.) Sprinkle nachos with the tomatoes and green onion
