Muchos Nachos

Ingredients

Bag of baked corn tortillas (try Multigrain)

Package of veggie ground round

1 cup Diced red peppers

14 oz Cheese blend (look for low fat)

2 Medium tomatoes

2 tbsp Green onion

Preparation

1.) Place the oven rack in the centre of the oven. Turn oven on to 375* F (190* C). Cover a baking sheet with foil, grease with cooking spray.

2.) To assemble your nachos, layer the ingredients on the sheet as follows:

a) 4 cups tortilla chips

b) 2/3 cup (150ml) veggie ground round

c) 1/3 cup (75ml) red pepper

d) 1 cup (250ml) of the cheese

Repeat a-d until all ingredients are used - remember you will have extra cheese to use on the top layer. Bake for 15 minutes until cheese is melted and starting to brown.

3.) Sprinkle nachos with the tomatoes and green onion

Cook's Notes

Serves 8 I know the fat would decrease tremendously with multi grain nachos plus fibre increases greatly. Plus the multi grain are way more filling. Low fat cheese melts less well but again less fat.
