1. Wash and slice tomato, place on serving plate and sprinkle with pepper if desired.
2. Split bagel lengthwise and toast to desired doneness. Spread 1/2 tsp margarine on each half.
3. heat a small skillet, lightly coated with non-stick cooking spray, over medium-high heat.
4. cook egg substitute until set, stirring frequently.
5. Remove egg from heat and place on bottom half of bagel. Sprinkle with shredded cheese, top with tomato and other bagel half.
6. Enjoy your sandwich with 1/2 cup fruit cocktail.
