1. Brown the lean beef in a skillet sprayed with Pam.
2. While beef is still pink, add sliced Vegetables and seasonings to the skillet, stir frequently.
3. When vegetables become cooked, add 1 serving of cooked brown rice and toss everything together.
4. Continue to heat until warm (a few minutes), stirring frequently.
5. Top beef and rice with shredded cheese, melt. (This is optional)
Serve warm on plate with 1 serving of steamed broccoli on the side, and a glass of ice water.
