Oven Burritos

Ingredients

6 Flour tortillas

1 can Black beans, drained

1 package Spanish rice, cooked

1 can Rotel diced tomatoes & green chilies

8 oz. Velveeta, cut into cubes

Preparation

Fill 6 flour tortillas equally with black beans and cooked Spanish rice (homemade or from a packaged mix). Roll up the tortillas, and place in a casserole dish.

Meanwhile, heat the combined Velveeta and Rotel tomatoes in a microwave until melted, about 5 minutes. (use more Velveeta if you prefer a thicker sauce).

Pour the cheese sauce over the burritos, cover, and let warm in the oven on a LOW setting for 30 minutes. Enjoy.
