Kelly's Chili and Cornbread Casserole

Ingredients

1 Medium white onion, chopped

1 lb Ground turkey (cooked)

1 11-oz Can corn

1 can Black beans (rinsed)

1 can Seasoned stewed tomatoes

1 clove Garlic

1 Green pepper (chopped)

4 oz Low fat shredded mozzerella cheese

3/4 cup Cornbread mix

2/3 cup Water

Zero-calorie, nonfat cooking spray

(i use a non-stick pan, so i don't use the cooking spray)

Instructions

Preheat oven to 400 degrees Fahrenheit. Cook ground turkey and then add chopped onions, green pepper and minced garlic. Cook over medium-high heat until tender. While onions cook, drain corn and grate cheese. Add corn and stewed tomatoes to turkey mixture in skillet, stirring to combine. Remove from heat and spoon into sprayed 8 inch square baking dish. Sprinkle with cheese. Combine cornbread mix and water, stirring only until smooth, then pouring over chili mix in baking dish. Bake approx. 18 minutes.

Cook's Notes

the original recipe used canned lowfat chili, but i prefer the ground turkey instead.
