Shrimp/Chicken Jambalaya

Ingredients

1/3 c. Celery

1/4 c. Chopped onion

1/4 c. Chopped gr. pepper

2 t. Butter

1 14.5 oz. Can diced tomatoes

1.5 c Vegetable or chicken broth

2/3 c. Brown rice (uncooked)

1 t. Dried basil

1/4 t. Garlic powder

1/4 t. Pepper

1/2 t. Hot sauce

1 Bay leaf

2 c. Cooked shrimp (or chicken)

Preparation

1. Combine celery, onion and gr. pepper 2/ butter in med. saucepan. saute until tender

2. Stir in all other ingredients except shrimp or chicen.

3. Bring to a boil. Reduce heat.

4. Cover and simmer for 20 minutes.

5. Stir in shrimp or chicken

6. Cook for a litle longer and serve!

Cook's Notes

It's great with shredded cheese and a bit of sour cream. Serve with a green salad and crusty french bread and it makes for a great meal on a winter's night.
