Baked Chicken with Onions, Garlic, and Rosemary

Simple dish that goes well with rosemary roasted potatoes.

Ingredients

4 lbs. Chicken parts
Salt and peppper
3 Medium onions, cut into rings
10 cloves Garlic, thinly sliced
4 tablespoons Olive oil
4 teaspoons Rosemary

Preparation

Preheat oven to 400 degrees. Rinse and pat dry the chicken. Season chicken with salt and pepper. Toss together onions, garlic, 2 tablespoons of olive oil, and rosemary. Spread half of the onion mixture in a shallow baking dish or roasting pan large enough to hold the chicken pieces in a single layer. Arrange the chicken pieces skin side up on top of onion mixture, then cover with the remaining onion mixture. Drizzle 2 tablespoons of olive oil over the chicken. Bake chicken until juices are clear, about 45 to 55 minutes.
