Ostrich Burgers with Oven Fries and Mixed Vegetables

Ingredients

12 oz. Cascadian Farms Organic French Fries

10 cups Baby greens or mesclun

2 cups Celery hearts or sticks, finely sliced

2 Tangerines or clementines, peeled and sectioned

8 Lightly toasted pecan or walnut halves, coarsely chopped

4 Thawed frozen ostrich burgers (4 oz. size)

4 tbsp. Nayonnaisse (soy-based sandwich spread) or low-fat mayonnaise

3/4 cup Annie's Naturals No-Fat Yogurt Dressing

2 cups Salsa

Preparation

1. Preheat the oven to 425 degrees F. Scatter the fries one layer deep on a baking sheet. Bake 15 to 18 minutes, turning fries after 10 minutes, to desired color and crispness.

2. Divide the greens, celery, tangerines or clementines, and pecans or walnuts among 4 large salad plates.

3. Lightly mist a large nonstick skillet with cooking spray and warm over medium-high heat. Add the burgers and cook for 2 to 3 minutes per side, until warm and cooked through but lightly pink inside.

4. Divide the burgers and fries among 4 large dinner plates. Top each burger with a tablespoon of Nayonnaise (soy-based sandwich spread) or low-fat mayonnaise. Add the yogurt dressing to the salads. Spoon the salsa over the burgers or fries and serve.
