Carpaccio of Salmon with Lime

Ingredients

1 lbs Salmon filets
2 Shallots
4 tbsp Olive oil
1 Lime

Preparation

Cut salmon into paper then slices, set aside.

Saute shallots and olive oil until slightly brown.

Squeeze in the lime juice and sprinking in the peel, stirring as you add.

When the mixture sizzles coat the plate with it and imediately add fish. Pour the remain lime oil over the salmon.
