Strip as much fat from the bacon as you can.
Cut bacon into chunks with meat scissors.
Cook the bacon, onion, and minced garlic together until the bacon is browned.
Add the remaining ingredients and bring the soup to a boil. Boil for about 10 minutes then reduce heat and simmer until potatoes are tender.
