Baked Zucchini Coins

Ingredients

1/2 cup Italian seasoned bread crumbs

3 Tbls. grated Parmasean

1/4 tsp. Black pepper

3 cups Thinly sliced zucchini

2 Egg whites, lightly beaten

Cooking spray

Preparation

preaheat oven 450 degrees. Combine bread crumbs, parmasean and pepper, mix well. Dip the zucchini coins in egg whites; then coat well in breadcrumb mixture.

Place zucchini in single layers on baking sheet coated with cooking spray. Bake for 10 minutes then turn over and bake an additional 10 minutes or until crispy brown.

I have been looking for this recipe for about 5 years. It's the closest to the recipe my grandmother used to use, but she took her cooking secrets to the grave. Thank you.
