Preheat oven 350
melt butter in large nonstick skillet over medium heat. add bell pepper and onions, saute 2 minutes. Add ham and saute 1 more minute to heat through.
In bowl, lightly beat eggs. Add to skillet and cook until eggs are set but still soft.
Spoon abotu 1/3 cup egg mixture evenly down tortilla, top with 1 tbls. cheese and roll tortilla up and place seam sides down in baking dish.
combine enchilada sauce and salsa in bowl. Pour evenly over all finished enchiladas. Cver with foil and bake 20 minutes.
Uncover and sprinkle with remaining 1 1/2 cups cheese and bake 10 minutes until cheese is melted.
