Super easy, and SOOO yummy!

Ingredients

6 Boneless skinnless chicken breasts, pork chops, or beef cuts (whole or cut up)

1 cup Apricot jam

8 oz Bottle Catalina salad dressing

1 package Onion soup mix

1 can Pineapple (pieces or crushed)

-----------------

2 cups Rice

Preparation

Preheat oven to 375

Mix jam, Catalina, and onion soup packet

Lightly brown meat over medium heat, then place in baking dish with sauce mixture. Bake covered for about 30 min (may vary with type of meat used). Add pineapple a few minutes before removing from oven.

Let stand for 10 min before serving over rice.

Cook's Notes

We've made quite a few different variations of this, but I think our favorite is when we use pork cut into 1 inch cubes. Also, when using chicken, thighs tend to have more flavor than breast meat in this recipe. We have also used different flavors of jam that taste just as good.
