Stir together in 9 in pie pan: olive oil and shredded potato. Press evenly into pie crust shape. Bake at 425 degrees for 15 minutes until just beginning to brown. Remove from oven.
Layer on: cheese, meat, and onion.
In a bowl, beat together: milk, eggs, salt, and pepper. Pour egg mixture over meat mixture. Sprinkle with Parsley and return to oven. Bake at 425 degrees about 30 minutes, or until browned, and knife inserted 1 inch from edge comes out clean. Allow to cool 5 minutes before cutting into wedges.
