BAKED CHICKEN A L'ORANGE

Ingredients

4 Skinless chicken breast halves

1 t. Extra-virgin olive oil

3/4 c. Frozen orange juice concentrate

1/4 t. Dried orange peel

1/4 c. Water

1 t. Ground ginger

1/2 t. Ground allspice

Preparation

Preheat oven to 350 degrees. Coat 12 x 8 inch baking dish with olive oil cooking spray. Arrange chicken in baking dish. Whisk together remaining ingredients. Pour over chicken. Bake 50 to 60 min. or until chicken is done, basting often with orange juice in baking dish.
