Ingredients

2 Chicken breast
1 cup Dried bread crumbs
1 cup Italian bread crumbs
1/2 cup Grated Romano cheese
1/4 cup Chopped parsley
1/2 tbsp Coarse ground pepper
1/4 cup Olive oil
1/2 quart Heavy cream
1/2 cup Chopped sundried tomato
2 tbsp Chopped fresh basil
1/2 tsp Chicken base (paste)

Preparation

Mix bread crumbs, parsley & Romano cheese. Set aside. In a medium sauce pan; heat heavy cream with sundried tomatoes, basil & chicken base. Salt & pepper to taste. Reduce to simmer. Bring 1/4 cup olive oil to heat in skillet. Tenderize chicken breast & dip in egg wash, then bread with cheese mix & saute unitl golden brown. Serve chicken over cooked pasta of your choice and top with sauce.
