Sambar loaded with vegetables

Ingredients
2 cups Tuvar daal
4 cups Water
1 Large onion - sliced
1 Small onion - chopped
3 Tomatoes - sliced
3 Green chillies
1 tsp Turmeric powder
1 tsp Chilli powder
1 Frozen pack cut green beans
1 pack Radish
1 Cucumber
1 Frozen pack of okra
1 pack Carrots
1 Eggplant
1 tbsp Salt
1 tsp Tamarind paste
1 tbsp All Purpose masala
2 Red chilli
7 Curry leafs
1 pinch Asoefotida powder
3 tbsp Olive oil
1 tsp Mustard seeds
Cilantro leaves
Preparation
1. Wash tuvar daal and boil in the water.
2. When the bubbles start to appear, skim the surface and throw out the bubbles.
3. Add the sliced onion and tomatoes, boil for 2 minutes, add the chilli powder and turmeric powder, boil for 4 minutes, then reduce heat , cover and simmer.
4. Meanwhile, cut the rest of the vegetables. 5. When the daal is completely boiled (around 20 - 25 minutes) smash with the potato smasher, then add the rest of the vegetables. 6. Bring to boil, then cover and simmer for another 1/2 hour.
7. Add the salt and tamarind paste, bring to boil, cover and simmer for 15 minutes
8. Add the All purpose masala, boil and simmer for another 15 minutes
9. After adding the all purpose masala, in another pan, add the olive oil and mustard seeds.
10. When the seeds splutter, add the red chilli and curry leaves.
11. Then add the chopped onion and asoefotida powder, let it fry till onion turs a golden color (this should be approximately, the 15 minutes for the boiling with the AP masala).
12. Pour this oil into the Sambar, and mix well. Garnish with cilantro leaves
Cook's Notes
1. Can be prepared with different vegetables than mentioned.
2. Can add potatoes, yam, snake gourd etc.
3. Masoor daal can be substituted for tuvar daal
