This is a good cheese sauce for california blend vegetables, mac-n-cheese (be careful not to use too much flour) or making cheese potatoes (slice potatoes and boil, then drain and pour sauce over, bake for about 30 minutes at 350° until the sauce thickens and the top is slightly browned)
1 stick Butter
1/3 cup Flour
1 1/2 to 2 cups Milk
1/3 Block of velveeta cheese
Melt the butter and flour together in a skillet stirring constently. Add the milk and stir until the consistency of gravy. Remove from heat and add chunks of velveeta. Stir until melted.
Using a fork to stir (run the flat part of the fork along the bottom of the pan) works better than a spoon to keep the sauce smooth and lump-free.
