Southwestern crockpot Chicken

Ingredients

2 cans (15 1/4 oz each) corn, drained
1 can (15 oz) black beans, rinsed and drained
1 jar (16 oz) chunky salsa
6 bl/sl Chicken breast halves
1 c Low-fat shredded cheddar cheese

Preparation

1. combine con, beans, and 1/2 cup salsa in slow cooker

2. top with chicken, pour rest of salsa over chicken

3. cover, cook on low 7-8 hours

4. sprinkle with cheese. Cover 5 minutes for cheese to melt.

Cook's Notes

Add 1 TBSP taco seasoning to make it a little more spicy. I serve it with torila chips for the corn salsa that cooks up with the chicken.

This meal was incredibly easy, and incredibly yummy!! I've made it 3 times now, and I keep experimenting with spices - and so far whatever I try has been good! My favorite is just some taco seasoning, but my husband likes it with cayenne pepper and tabasco sauce added. The chicken is always very moist and flavorful. Our favorite way to eat it is with rice - the corn/bean/sals sauce mixed in makes a flavorful mexican rice.

Mmmhmm... I added chili pepper, cayenne, salt and pepper. I just made it for the first time today. I used medium salsa. Next time I will use hot. If you like spice then hot SHOULD be just enough. I also added a brown rice medley from Trader Joes. Prep was super easy and it was well worth the wait!! Extremely high in protein and very low in calories. I will be making this once a week for lunches for sure!!!

I agree with Jenny, this was a great meal. the chicken was very tender. I added some spices, and also a pinch of cinnamon. it was a great surprise flavor. delicious!

This was great and the chicken came out so moist. It could use a little more seasoning, so I added half of a packet of taco seasoning to the crockpot to add a little more flavor. I shredded the leftover chicken and turned it into chicken tacos the next night...awesome!!
