Crockpot Minestrone

Easy and filling... great for a cold day!

Ingredients

1-2 Russet Potatoes, peeled and cubed

2 16 oz. Cans diced tomatoes

1 16 oz. Can tomato sauce

4-6 cups Water (depending on how thick you like your soup)

4 Vegetable bullion cubes

1/2 Onion, chopped

1 clove Garlic

1 1/2 tsp Italian seasoning

1 small pkg Frozen veggies

1 15 oz Can red kidney beans (drained and rinsed)

1 cup Pasta (small cheese filled ravioli or tortellini is good)

Preparation

Dump everything except the pasta in the crockpot and simmer on low all day (6-8 hrs). Turn up to high and add the pasta (may need to add more water, just stir and check it out). Simmer on high about 1 hour until pasta is cooked through. Top with parmesan cheese.
