You can buy pre-cut, skinned and boned chicken breasts from your butcher, or you can do it yourself.
Preheat the oven to 375 degrees and make sure rack is in the center of the oven.
Prepare chicken by cleaning, drying and laying the breasts in a baking dish that has been coated with Pam.
Lightly brush each breast with extra virgin olive oil.
Lightly season breasts with sea salt, pepper and lemon zest. If you do not have lemon zest then you can use the pre-seasoned containers of lemon pepper.
Place chicken in oven and bake until done. Usually 30 minutes or so.
While chicken is cooking, prepare the long grain rice as instructed on the bag/box. Substitute one cup of water with one cup of chicken stock/broth.
Prepare salad greens.
