Cornmeal Cod

Adapted from Spicy Cornmeal Cod from Betty Crocker.

Ingredients

1 1/2 lbs Cod, perch or other lean fish (fillets about 1/2 inch thick)

3/4 cup Cornmeal

1/4 cup Flour

1/2 tsp Salt

1/2 tsp Garlic powder

1/2 tsp Dried oregano leaves

1/2 tsp Pepper

1/2 tsp Cayenne (optional) or use other seasoning

2 Lg eggs, beaten

3 tbsp Organic or raw butter, melted

Preparation

Heat oven to 500.

Cut fish fillets into 4 x 2 inch pieces. Mix remaining ingredients except eggs and butter. Dip fish into eggs, then coat with cornmeal mixture.

Place fish on un-greased cookie sheet. Drizzle melted butter over fish. Bake 10 - 12 minutes, turning fish once, until golden brown.
