Cook's Notes

Recipes designated Carb Safe are recipes containing 30 grams of carbohydrates or less. Some recipes may be high in fiber (i.e. more than 5 grams). For some people with diabetes, carbohydrates from fiber sources may have a more blunted effect on their blood glucose levels. Talk to your healthcare provider about whether or not you need to adjust your insulin to carbohydrate ratio if much of the carbohydrate you’re eating is fiber.
