Ingredients

3 tablespoons Vegetable oil

3/4 teaspoon Salt

1/2 teaspoon Dry mustard

1/8 teaspoon Paprika

1/4 teaspoon Hot sauce

1 cup Unsweetened grapefruit juice, divided

2 teaspoons Cornstarch

Preparation

1. In a small bowl, combine the vegetable oil, salt, dry mustard, paprika, and hot sauce. Stir until well blended and set aside.

2. Separately, combine 1/2 cup of the grapefruit juice and cornstarch in a small saucepan and stir to blend. Stirring constantly, cook over medium heat until the mixture is bubbly and thickened. Remove from the heat.

3. Combine the oil and cornstarch mixtures in the bowl and then beet with an electric mixer at medium speed until smooth. Add the remaining 1/2 cup of grapefruit juice and beat until the dressing is blended well.

4. Cover and refrigerate until well chilled.

You ca easily reduce the fat levels in your dressing recipes by replacing two-thirds of the oil called for with pureed cucumber or plain, unsweetened low-fat yogurt.

To use CarbSmart and the Food Database, follow these steps: 1. From the Home screen, select Menu. Click ok. 2. Scroll down to Setup and click OK. 3. With Advanced highlighted, click OK. 4. With Next highlighted, click OK. 5. Scroll up to OFF at Adv. Bolus and click OK. 6. Click the Up button to change to ON and click OK. 7. With Home highlighted, click OK. You can now access the Advanced Bolus Features in the Bolus Menu
