Buffalo Chili

This might be a good recipe for trying bison meat, to discover that it tastes a lot like beef, only better.

Ingredients

1 tbsp Coconut oil

1/2 cup Chopped onions

2 Med garlic cloves, minced

1 1/2 cups Chopped celery

1 cup Chopped green pepper (optional)

1 1/2 lb Ground bison or buffalo meat

2 tsp Thyme leaves

1/2 - 2 tsp Chili powder*

1/2 - 2 tsp Ground cumin*

1 tsp Sea salt

1 8 oz Can tomatoes

1 12 oz Jar prepared salsa*

*Depending on if you like it mild or hot

Preparation

1. in large skillet or crockpot on medium to hight, melt oil and saute onions, garlic, celery and pepper until onion is translucent, 3 - 4 minutes.

2. add ground meat, thyme, chili powder and cumin, and cook, stirring frequently, for 5 - 6 minutes.

3. pour salt, tomatoes, and salsa into pot. Cover, reduce heat and simmer for a minimum of 1 hour. Crockpot on low can simmer for quite a few hours.

4. serve in bowls or over tiny steamed cauliflowerettes.

Substitute ground ostrich or turkey breast meat. Use 1 - 16 oz. can tomatoes. Notes and Suggestions: This is a popular winter favorite that can be made healthier by using bison or buffalo meat and varied for type with appropriate vegetables and meats. Excellent accompaniments are traditional coleslaw, Sunny Rainbow Cabbage Salad or Northwoods Broccoli Salad.
