Baked Ranch Chicken

Ingredients

6 Boneless skinless chicken breasts

1 Tbls. Olive oil

1 tsp. Garlic

1 Pk. dry hidden valley ranch

1/2 cup Bread crumbs

1/2 cup Mozzarella cheese

1 Small can or fresh mushrooms

Preparation

Marinade the chicken in the olive oil and garlic for about an hour.

Preheat oven 350*

Mix the ranch packet with breadcrumbs and coat the chicken.

Add to a baking dish coated with non stick spray.

Bake for about 30 minutes until no longer pink.

meanwhile, saute mushrooms in small frying pan with 1sp. olive oil.

Add mushrooms on top of chicken then the mozzarella cheese and put back into the oven until the cheese melts.

I marinated the chicken in buttermilk w/ 1 tsp. grill seasoning for chicken, and sauteed some chopped onion w/ the mushrooms. My family raved about this dish, even my son, who dislikes chicken!
