3/4 lb. Boneless, skinless chicken breasts, cubed into 1-inch pieces
1 Onion, diced
1 Yellow pepper, diced
1 Red pepper, diced
4 cloves Garlic, minced
3/4 cup Lentils
1 1/4 cups Fat-free, reduced-sodium chicken broth
1/2 cup Water
1 cup Diced no-salt-added tomatoes with juice
1 tsp. Ground ginger
1/2 tsp. Ground coriander
1/2 tsp. Cinnamon
Salt and freshly ground black pepper, to taste
Add all ingrediants into crockpot. Cook on low for 8 hours or until chicken and lentils are done.
