Christmas in New Mexico

In New Mexico, it is traditional to eat posole and tamales on Christmas Eve.

Ingredients

2 tbl Bacon drippings or oil

1 Lg onion, chopped

3 cloves Garlic, minced

1 1/2 lbs. Pork, lean cut stew size

1 1/2 tsp Oregano

2 tsp Cumin, ground

2 Bay leaves

1/2 cup White wine, dry

1/2 cup Water

1 #10 can White hominy, w/ juice

1 cup New Mexican green chili, chopped OR 3 cans canned green chili

Preparation

In a heavy pot, heat bacon drippings (or oil)

Add onions and garlic, cook until slightly browned, remove from pan

Add meat to pan (don't crowd pan, KEY step)

Return onions and garlic to pan

Add remaining ingredients, simmer partly covered for 1 hour

Add hominy and green chili, simmer 30 minutes

Serve in bowls with dollop of sour cream and red chili sauce (or salsa) and a tortilla (or two)
