Banana Bread

This is the best, and uses no nuts but you can add them.

Ingredients

¼ c. Butter

1 tsp. Salt

1 c. Sugar

2 Eggs

1 ½ c. Flour (see note)

1 tsp. Baking soda

3 Bananas, beaten creamy (see note)

Preparation

Cream butter, add salt, add sugar, gradually. Add eggs one at a time, beating well after each addition. Sift flour together with soda. Mash bananas with a fork, beat until light, add alternately with dry ingredients to egg mixture. No nuts in recipe, but you can add 1 c. chopped nuts if you want. Turn into greased loaf pan. Bake 1 hour at 350 degrees (sometimes a little longer), till knife in center comes out clean. I like to spread some butter over the top right out of the oven.

Cook's Notes

I usually use half unbleached all-purpose flour and half whole wheat flour. I also add three heaping spoonfuls of milled flax seed. If I use 100% whole wheat, then I add one more banana.
