Dirty Rice

Family recipe

This is an old family recipe, authentic Cajun. You have to play around with it some to get the flavor you want.

Ingredients

2 c. White rice

1 lb. Ground sausage (Jimmy Dean or Owens)

1/4 to 1/2 lb. Ground beef

1 Medium onion

1 Bell pepper

3 Or 4 green onions

Salt to taste

Red pepper to taste

Preparation

Cook about 2 cups of rice, don’t season. 1 lb. of ground sausage meat (Jimmy Dean or Owens) and ¼ to ½ lb. ground beef and brown it well, put it in strainer paper towel and mash it down. Put it back in pan and add chopped medium onion and bell pepper, green onions if you have them. Cook that down with a little water, cover and simmer slow slow. Mix rice with everything, but not both cups at the same time. Mix it up till you feel like you’ve got a fair amount of rice and season to taste. Salt and red pepper to taste. Mix it all together, sometimes it takes all the rice, sometimes it doesn’t.

Play around with it. This is an old Cajun family recipe that you just kind of have to work with, but once you do find the flavor you like, it's very worth it!
