Blueberry Bran Muffins

Very nutritious!

Ingredients

1 ¾ c. Bran flakes cereal

1 c. Buttermilk*

1 Egg, beaten

3 tbsp. Vegetable oil

1 c. Flour

1/3 c. Packed brown sugar

1 tbsp. Baking powder

1 tsp. Ground cinnamon

1 c. Fresh, frozen or canned blueberries, drained

Milled flax seed (optional)

Topping:

¾ c. Bran flakes cereal crushed to 1/3 c.

3 tbsp. Packed brown sugar

1 tbsp. Butter, melted

Preparation

Preheat oven to 400 degrees. Grease or paper line 12 muffin cups. Combine cereal, buttermilk, egg and oil in bowl. Let stand 5 minutes, stir to break up cereal. Combine flour, sugar, baking powder and cinnamon in separate bowl. Add cereal mixture all at once to flour mixture, stirring just until combined. Divide evenly among prepared muffin cups. Sprinkle with topping. Bake 20 to 25 minutes or until tester inserted in center comes out clean.

To prepare topping: Combine cereal, sugar and butter; mix well. Divide evenly over muffins.

Cook's Notes

*1 tbsp. lemon juice or vinegar and enough milk to equal 1 cup may be substituted. I put at least three heaping spoonfulls of milled flax seed in nearly everything I bake.

Hi there! I just use a regular spoon from my tableware. Milled flaxseed can be found usually near the flour and other baking goods like that. The kind in my store is in a box next to the cornmeal (which is next to the flour).

what are "milled" flax seeds? what size is meant by spoonful - tsp? TBL?
