Layered Stuffed Peppers

This makes a great casserole that you can divide in two pans and freeze one for later.

Ingredients

1 lb. Ground beef or axis

½ c. Chopped onion

3-4 Bell peppers

1 ½ c. (6 oz.) shredded cheddar or Colby jack cheese

1 can Pinto or black beans (or use one can of each)

4 Eggs

¼ c. Flour

½ tsp. Salt & pepper

Dash hot sauce

1 package Taco seasoning

1 ½ c. Milk

Preparation

Brown beef (drain) and add onions, cook a little longer. Mix in salt, pepper, taco seasoning. Layer quartered bell peppers in a 9x13 baking dish. (Remove seeded centers first.) Sprinkle cheese over peppers and then add beans to meat and spread on top of cheese. Combine milk, eggs, flour (add hot sauce). Beat until smooth. Pour over peppers and meat. Bake at 350 degrees for 45 to 50 minutes, until knife inserted in center comes out clean. Top with layer of shredded cheese. (This is easily cut in half and put in smaller pan, or you can make the whole recipe and split into two pans and freeze one before baking.)
