Baby Spinach and Beet Salad

Ingredients

2 med beets(1lb W/o tops) peeled and cut into match stick thin stips

2 t Rice seasoned Rice Vinegar

1 tsp Soy sauce

1/4 tsp Asian Seasme oil

1/4 bag Baby spinanch

1/2 t Sesame seeds, toasted

Preparation

1. Stir uncooked beets, 1T vinegar

1/2 tsp soy sauce

and 1/8 tsp sesame oil

Let stand at room temperature 15 min or up to 2hrs

2. Just before serving toss spinanch with remaining vinegar, soy sauce and sesame oil. Top spinanch w/ beets and their mirande; spering with seasme seeds
